— T R A I L & T A B L E —
Hosted Escapes in regional Australia.
Small-group walking, food and wine escapes — curated, hosted and well-paced.
WHAT THESE ESCAPES ARE
Not off-the-shelf tours. Not hard-core hiking holidays.
Small-group regional escapes designed to balance movement, indulgence and ease — rewarding walks, good places to eat and drink, local character and enough structure to make the trip feel seamless without becoming rigid.
You arrange your own accommodation and transport. Trail & Table takes care of the curation, rhythm, hosting and practical flow of the experience.
A spring escape through golden canola country, Riverina food stops and gentle-to-moderate walks.
Spend three nights exploring the NSW Canola Trail and surrounding Riverina towns during one of the brightest windows in the regional calendar. This seasonal Trail & Table escape blends country drives, big-sky landscapes, canola-field photo stops, local food, regional wine, heritage towns and walks that give the weekend more depth than a simple scenic drive.
Based around Junee and Young, this is a self-drive, self-accommodation escape for people who want a more curated way to experience canola season: active enough to feel earned, relaxed enough to feel like a proper spring break.
THE ESCAPE AT A GLANCE
What the three nights are built around
This is a seasonal escape, shaped around the flowering window and the best available conditions on the ground. The exact sequence may vary, but the broad ingredients are consistent: canola country, country towns, regional food, easy-to-moderate walking and hosted curation.
Canola country drives with time for scenic stops, photography and the simple pleasure of seeing the Riverina in spring.
Country-town food and drink across bakeries, pubs, cafes, produce stops and relaxed and upscale regional dining.
Gentle-to-moderate walks chosen to add movement, landscape and a sense of place without turning the escape into an endurance trip.
Regional wine, orchards or cellar-door stops where available and aligned with the final route.
A practical accommodation rhythm using Junee as the first base for access and flexibility, then Young for the final night.
Small-group hosting with the ability to adapt around weather, flowering, timing, bookings and group pace.
WHY THE NSW CANOLA FIELDS
A short-season spectacle with more around it than you might expect
The NSW canola fields are one of the great seasonal road-trip moments: bright, photogenic and unmistakably regional. But the best version of the trip is not just about stopping at the side of the road for a photograph.
This escape is built to give the canola season context. The fields become part of a broader Riverina weekend: historic towns, country hospitality, regional produce, local walks, wineries, bakeries, gardens and heritage stops.
It is the kind of seasonal escape that rewards timing, local sequencing and flexibility. Go too fast and it becomes a drive-by. Slow it down and it becomes a memorable spring weekend.
WHY JUNEE AS A BASE
Close to the fields, with practical accommodation options
The escape uses Junee as the practical base for the first two nights because it gives the weekend flexibility during a busy seasonal period, while still keeping the canola country and nearby towns within easy reach.
That means the program can still make the most of Coolamon and the Canola Trail, while also drawing on Junee’s own character, food options, railway heritage and nearby attractions. It is a workable base for a small hosted group without losing the reason for the trip.
The final night shifts the focus toward Young and the return route, giving the escape a natural forward flow rather than forcing everything back through the same town.
WHAT TO EXPECT
Self-drive, hosted and shaped by the season
This is a self-drive, self-accommodation hosted escape. You arrange your own transport and accommodation, then join the hosted Trail & Table program across the three nights and four days.
Because this is a seasonal experience, the exact route, stops and timing may change. Flowering conditions, weather, road conditions, venue availability and group pace will all influence the final version of the weekend.
The aim is simple: make the most of the canola season, without turning the trip into a rigid checklist or a long day in the car with too little time to enjoy the places along the way.
INDICATIVE ESCAPE FLOW
Day 1: country drive, lunch stop and arrival in Junee
On Friday, make your own way toward the Riverina, with the option to break up the drive at a quality country food stop along the way, recommended by Trail & Table.
The afternoon eases into Junee: check in, stretch your legs, explore a recommended local food-based attraction and heritage stop if timing allows, then gather for a relaxed first-night dinner.
The first evening’s dinner is about getting the group settled, setting the weekend rhythm and preparing for the canola-country day ahead.
Day 2: canola country, Coolamon and Wagga Wagga
Saturday is the day the landscape takes centre stage. We move through canola country, with time for scenic stops and photographs when conditions are right.
The route is designed to connect the fields with small-town gourmet food stops, a relaxed walk or wetlands/reserve experience, and the option of a winery, brewery, gallery or upscale country dining experience later in the day.
The point is not to rush from one attraction to the next. It is to let the yellow fields, towns, food and walking build into a proper regional day out.
Day 3: Temora, Young and regional food and wine
Sunday shifts toward Temora and Young, with a morning walk selected to suit conditions and group energy.
From there, the day opens into orchard country, cellar doors, bakeries, pubs and other regional food-and-drink stops, depending on what is open, available and most worthwhile on the weekend.
By moving the final night to Young, the escape has a natural second base and a different regional flavour, rather than doubling back unnecessarily.
Day 4: Young, Cowra and the road home
The final day keeps the pace gentle: a bakery or local food stop, a short walk, a garden/heritage experience, and a gradual return toward Sydney.
Depending on timing and group interest, the day may include scenic lookouts, gardens, regional history or a final country lunch before the drive home.
The goal is to finish the escape feeling like you have done more than look at the fields: you have experienced the region around them.
WHO THIS ESCAPE IS FOR
For travellers who want a seasonal road trip with more substance
This escape is designed for people who love the idea of seeing the canola fields, but want someone else to do the thinking around where to stop, how to pace the drive and how to turn the trip into a proper long weekend.
It will suit you if you enjoy:
Seasonal landscapes and regional road trips.
Country bakeries, pubs, produce stops and relaxed regional dining.
Moderate walking, but not technical or punishing hiking.
Photography, big skies and small-town discoveries.
Independent travel with the benefit of hosted structure.
Small groups, flexible pacing and shared discoveries.
It is suitable for friends, couples, solo travellers and private groups who want a hosted regional experience while keeping control of their own transport and accommodation choices.
WHAT IS INCLUDED
Hosted structure, seasonal curation and practical guidance
Final inclusions may vary by departure, but the hosted escape will typically include:
Hosted group coordination across the three-night escape.
Curated route planning around the canola flowering window and regional highlights.
Walking route selection and on-the-day guidance.
A considered food, wine, country-town and scenic-stop program.
Restaurant, cellar-door, activity and lunch-stop recommendations or reservations where included.
Practical pre-escape notes covering what to bring, where to meet and how to prepare.
Small-group hosting by Road & Table / Trail & Table.
WHAT IS NOT INCLUDED
Self-drive, self-accommodation format
To keep the escape flexible and accessible, this is a self-drive, self-accommodation model.
Unless otherwise stated, you arrange and pay for:
Transport to, from and around the Riverina and Canola Trail region.
Your own accommodation in Junee, Young or nearby towns as directed for each departure.
Meals and drinks.
Cellar-door tasting fees or attraction entry fees.
Personal travel insurance.
Any optional purchases, including wine, produce, bakery items or retail goods.
This format allows you to choose the accommodation style and budget that suits you, while still getting the benefit of a hosted, curated Trail & Table experience.
FITNESS AND PACE
Gentle-to-moderate, with plenty of road-trip rhythm
This is an active escape, but it is not designed as a hardcore hiking trip. You should be comfortable walking for a few hours on natural surfaces, formed tracks or uneven ground, with some gentle inclines depending on the chosen route.
Some walks may be short and easy; others may be a little more energetic. The final choices will depend on weather, track conditions, group capability and the best fit for the day.
There is also some driving involved. The escape is designed as a regional road trip with hosted structure, so the rhythm is drive, stop, walk, eat, explore and continue, rather than staying in one small area all weekend.
SEASONAL NOTE
The fields are seasonal, so flexibility matters
Canola flowering is nature-based and varies by season, weather, rainfall and local farming cycles. The escape will be timed to give the best chance of seeing the fields in bloom, but exact colour, density and field access cannot be guaranteed.
That is why the weekend is designed with more than one reason to go: country towns, walks, food, wine, heritage and regional hospitality all sit around the canola-season highlight.
Bring layers. Early spring can still be cool, particularly in the evenings.
THE TRAIL & TABLE DIFFERENCE
Not just a scenic drive
The canola fields are beautiful, but a great seasonal escape needs more than a map pin and a photo stop.
Trail & Table does the thinking around timing, route flow, walking options, drive times, food stops, accommodation bases, venue availability and group pace. The aim is to make the weekend feel easy, considered and genuinely regional.
This is the NSW Canola Fields with more depth: golden landscapes, country-town character, movement, food, wine and a hosted rhythm that makes the most of a short seasonal window.

Gold-rush heritage, cool-climate wine and walks that earn the table
Beechworth is one of those rare regional towns where the setting, history, food, wine and walking all work together. It has enough depth for more than a quick weekend, which is why this Trail & Table escape is designed as a four-night extended weekend rather than a standard two-night getaway.
Over four nights, we use Beechworth as a base for a hosted escape that blends local walks, gold-rush heritage, nearby wine regions, destination dining and an alpine day out, depending on conditions.
Expect historic streets, old stone buildings, cellar doors, breweries, regional produce, good coffee, generous meals and walks that give the weekend a sense of place before you sit down at the table.
THE ESCAPE AT A GLANCE
What the four nights are built around
The Beechworth Extended Signature Escape is deliberately more layered than a conventional long weekend. The extra time allows the group to experience Beechworth itself, the surrounding goldfields landscape, nearby food-and-wine country and, conditions permitting, a more scenic walking day further afield.
Hosted walks selected from the best local and regional options, with the final route choices shaped by weather, group pace and conditions.
Heritage and town time including Beechworth’s historic precinct, lake walks, old-gaol atmosphere and gold-rush-era streetscapes.
Cool-climate cellar doors and breweries across Beechworth and surrounding North East Victorian wine country.
Destination food experiences from relaxed country hospitality through to more elevated regional dining.
A flexible extended-weekend rhythm with enough structure to feel curated, and enough space to enjoy the region properly.
WHY BEECHWORTH
A small town with serious depth
Beechworth works beautifully for Trail & Table because it is not just a pretty historic town. It sits at the intersection of goldfields history, North East Victorian wine, strong regional food culture and accessible walking country.
The town itself has a strong sense of atmosphere: heritage buildings, old laneways, bakeries, bars, breweries, shops, lake paths and gaol history. Beyond town, the wider region opens up to cellar doors, food villages, alpine landscapes and walking options that can be dialled up or down depending on the group.
It is the kind of place where a two-night stay can feel too rushed. Four nights gives the weekend room to breathe.
WHAT TO EXPECT
Hosted, curated and comfortably active
This is a self-drive, self-accommodation hosted escape. You arrange your own travel and accommodation, then join the hosted Trail & Table program across the four nights.
The exact flow may vary by departure. Some experiences depend on seasonal conditions, restaurant availability, cellar-door bookings, tour times and the walking ability of the group. That flexibility is part of the design: the aim is to create the best version of the weekend on the ground, not lock the group into a rigid schedule.
Across the escape, the rhythm is simple: walk, explore, taste, eat, rest, repeat.
INDICATIVE ESCAPE FLOW
Day 1: Arrive, settle and gather
Make your own way to Beechworth, with the option to turn the journey into part of the experience via a quality lunch or regional stop on the way, recommended by Trail & Table.
After check-in, there is time to stretch your legs around town, take in the historic streetscape, walk near the lake, or ease into the weekend with a drink before the first group dinner.
The opening night sets the tone: upscale food, good wine and a chance to meet the group before the walking begins.
Day 2: Beechworth on foot, then food and wine
The first full day is built around Beechworth itself: walking, history and the landscapes immediately around town.
Depending on conditions, we may explore local trails, creek lines, lookout country, historic parkland or a walk that connects the town’s gold-rush past with the surrounding bushland.
The afternoon shifts toward regional hospitality: a country lunch, cellar-door tasting, brewery stop or relaxed drinks experience, with dinner either hosted or at leisure depending on the final program.
Day 3: heritage layers, local walks and North East Victorian wine country
Day 3 gives us room to go a little deeper. The morning may include a shorter walk, a heritage-focused town experience, gardens, lake paths or a gentler regional trail.
From there, the day can open into the food-and-wine country around Beechworth, Milawa, the King Valley or nearby towns, depending on bookings and the best fit for the group.
This is the day where the table may become the main event: a long lunch, an exclusive tasting, or a carefully chosen regional food experience that shows why North East Victoria deserves more than a quick pass-through.
Day 4: a bigger scenic walking day
The fourth day allows for a more ambitious regional excursion, potentially including alpine or foothill landscapes around Bright or Mt Buffalo, if the weather and group pace are right.
The walking options can be adjusted from scenic and moderate through to more energetic, with the reward being amazing views, fresh air and a very good reason to enjoy a relaxed late lunch, brewery stop, cellar-door visit or simple pub dinner afterwards.
Because this is an extended escape, there is space to make the most of a bigger day without rushing straight home.
Day 5: slow departure or onward travel
On the final morning, a scenic local walk before you check out and make your own way home, or continue your travels through Victoria and North East wine country.
For many guests, Beechworth works as both a destination and a jumping-off point: close enough to feel accessible, rich enough to justify lingering.
WHO THIS ESCAPE IS FOR
For travellers who like their weekends with texture
This escape is designed for people who want more than a restaurant booking and a few wine tastings, but who do not want a bootcamp-style hiking trip.
It will suit you if you enjoy:
Regional food and wine, but with a bit of movement before a long lunch.
Walking, history and scenery, without needing to carry a heavy pack or tackle a technical hike.
Comfortable, independent travel with the benefit of hosted structure.
Small groups, good conversation and shared discoveries.
A four-night escape that feels like a proper break rather than a rushed weekend.
It is suitable for friends, couples, solo travellers and private groups who want a hosted regional experience while keeping control of their own transport and accommodation choices.
WHAT IS INCLUDED
Hosted structure, local curation and practical guidance
Final inclusions may vary by departure, but the hosted escape will typically include:
Hosted group coordination across the four-night escape.
Curated walking route selection and on-the-day guidance.
A considered food, wine, brewery and heritage program.
Restaurant, cellar-door and activity recommendations or reservations where included.
Practical pre-escape notes covering what to bring, where to meet and how to prepare.

WHAT IS NOT INCLUDED
Self-drive, self-accommodation format
To keep the escape flexible and accessible, this is a self-drive, self-accommodation model.
Unless otherwise stated, you arrange and pay for:
Transport to, from and around Beechworth.
Your own accommodation.
Meals and drinks.
Cellar-door tasting fees.
Optional heritage tours, jail tours, ghost tours or other paid activities.
Personal travel insurance.
Any optional purchases, including wine, produce or retail items.
This format allows you to choose the accommodation style and budget that suits you, while still getting the benefit of a hosted, curated Trail & Table experience.
FITNESS AND PACE
Moderate, flexible and weather-aware
The Beechworth escape is active, but it is not designed as a hardcore hiking tour. You should be comfortable walking for several hours on natural surfaces, uneven tracks and up and down some hills and stairs.
Some walks may be shorter and gentler; others may be more scenic and energetic, depending on the final route choices and group capability. The four-night format gives the weekend flexibility to adjust the walking program around heat, rain, wind, track conditions and the general energy of the group.
Trail & Table weekends are about enjoying the landscape and earning the table, not racing to the finish or pushing yourself beyond your limits.
THE TRAIL & TABLE DIFFERENCE
The thinking is in the sequence
Beechworth and North East Victoria are full of appealing things to do! The challenge is knowing how to link them together so the escape feels considered rather than crowded.
Trail & Table does that thinking for you: balancing drive times, walking conditions, meal timing, cellar-door availability, group energy, weather and the best way to experience the region without turning the weekend into a checklist.
The result is a hosted escape that feels regional, active, generous and grounded in place.
Cool-climate wine, country dining and walks that earn the table
Orange is one of NSW's great food and wine regions, and it is also one of the few places where a weekend can genuinely balance beautiful walking, serious cellar doors and memorable regional dining without feeling over-planned or over-polished.
This Trail & Table Signature Weekend is designed for people who want more than a standard wine weekend, but less than a hardcore hiking trip.
Expect crisp country air, volcanic landscapes, cool-climate wines, relaxed walking, generous meals and a small group of like-minded travellers who are happy to earn the long lunch, the cellar-door tasting and the dinner reservation.
This is Orange done the Road & Table way: active, considered, delicious and easy to say yes to.
The weekend at a glance
Over two nights, we'll use Orange as our base for a curated weekend of:
Guided day walks through the landscapes around Orange, selected according to conditions, group pace and the best experience on the weekend.
Cool-climate cellar doors chosen for quality, character and regional expression - not just the most obvious stops.
Excellent regional dining, from relaxed country hospitality through to elevated food-and-wine experiences.
Small-group hosting, with the flexibility to adapt the weekend around weather, group energy, cellar-door availability and seasonal highlights.
The result is a weekend that feels thoughtfully hosted, but never rigid.
Why Orange?
Orange has a rare combination of assets: high-altitude wines, strong regional produce, beautiful surrounding landscapes and a genuinely good food scene.
It is a region where you can walk in the morning, taste in the afternoon and sit down to a proper dinner at night - without spending the whole weekend in the car.
For Trail & Table, Orange works because it offers the right balance of movement and reward: fresh air, scenic trails, interesting wine, good pubs, destination dining and enough depth to make the weekend feel curated rather than obvious.
What to expect
This is a self-drive, self-accommodation hosted weekend.
You arrange your own accommodation and transport to Orange, then join the hosted weekend program across Friday evening, Saturday and Sunday. The exact flow may vary depending on weather, trail conditions, cellar-door availability and group preferences, but the broad rhythm is simple:
Arrive Friday, settle in and join the group for dinner.
Walk Saturday morning, then move into a relaxed afternoon of cellar doors and regional drinks before dinner.
Walk again Sunday morning, with time for lunch and/or one last tasting before returning home.
The walks are designed to be achievable for people with a reasonable base level of fitness. This is not a technical hiking trip, but you should be comfortable walking for a few hours on uneven ground and up and down some hills and stairs.
Indicative weekend flow
Friday evening - arrive and gather
Make your own way to Orange and check into your accommodation.
We'll meet for an upscale welcome dinner that sets the tone for the weekend: good food, good wine and a chance to get to know the group before the active part begins.
Depending on availability, dinner will be at one of Orange's stronger regional dining venues.
Saturday - walk, wine, dinner
Saturday starts with a hosted walk selected from the best available options around Orange and its surrounding landscapes.
Depending on the weather and group pace, this may include bushland, volcanic country, botanic landscapes, creeks, lookouts and limestone formations. The aim is to give you a proper sense of the region on foot, without turning the weekend into an endurance event.
After the walk, we'll shift into Orange's food and wine scene.
The afternoon is built around a small number of carefully chosen cellar doors or wine experiences, with time to taste, talk and understand what makes the region distinctive.
Later, we'll gather again for drinks and dinner - the kind of country-region evening that feels earned after a day outside.
Sunday - one more walk, one more taste
Sunday gives us time for another shorter walk or scenic regional experience before lunch.
Depending on the group, we may finish with a relaxed pub lunch, and/or a final cellar-door stop or a low-key local food experience before people make their way home.
The weekend is designed to finish with enough time to drive back to Sydney at a sensible hour.
Who this weekend is for
This weekend is for people who like the idea of a wine-region escape, but want something more active and more curated than simply booking a restaurant and a few tastings.
It will suit you if you enjoy:
Good food and wine, but not wine weekends that revolve entirely around drinking.
Walking, but not punishing multi-day hikes.
Regional Australia, but with a little comfort and good planning.
Small groups, shared discoveries and hosted structure without being herded around.
It is ideal for friends, couples, solo travellers and private groups who want the confidence of a planned weekend without losing the independence of self-drive travel.
What's included
Final inclusions may vary by departure, but the hosted weekend will typically include:
Hosted group coordination across the weekend.
Curated walking route selection and on-the-day guidance.
Planned cellar-door and food stops.
Dinner and drinks recommendations or reservations where included.
Practical pre-weekend notes so you know what to bring, where to meet and how to prepare.
Small-group hosting by Road & Table / Trail & Table.
What's not included
To keep the weekend flexible and accessible, this is a self-drive, self-accommodation model.
Unless otherwise stated, you arrange and pay for:
Transport to and from Orange.
Your own accommodation.
Meals and drinks.
Cellar-door tasting fees.
Personal travel insurance.
Any optional purchases, including wine and retail.
This format gives you more control over your accommodation budget and travel arrangements, while still giving you the benefit of a hosted, curated weekend.
Fitness and pace
The walks are moderate rather than extreme, but this is still an active weekend.
You should be comfortable walking on natural surfaces and uneven tracks, with some hill ascents and descents and stairs depending on the selected route.
Walks will be chosen based on conditions and group suitability. Trail & Table weekends are about enjoying the landscape and earning the table - not racing to the finish or pushing beyond your limits.
The Trail & Table difference
Orange is not short of places to eat, drink or walk. The challenge is knowing how to pull them together into a weekend that flows.
Trail & Table does the thinking for you.
We consider the sequence, drive times, group energy, weather, food quality, cellar-door character and the rhythm of the weekend - so you can simply arrive, walk, taste, eat and enjoy the region.
This is not a generic itinerary.
It is a hosted, food-and-wine-led walking weekend built around the best of Orange, with enough flexibility to make the most of the conditions on the ground and the dynamics of the group.
